Ingredients

  • 125 g Butter, cut into pieces
  • 200 g white sugar
  • 2 eggs
  • 1 tsp almond essence, optional
  • 220 g plain flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 30 g ground almond
  • 225 g sour cream
  • 500 g feijoas, skinned and chopped in 1/2 or 1/4s
  • 1 tablespoon coarse sugar, i.e demerara (heaped tablespoon)
  • ground ginger, good pinch

Recipe's preparation

  1. Preheat oven to 200C

     

    Line base of a 22cm cake tin & spray the sides

     

    Place butter, sugar, eggs, almond essence (if using) into bowl and mix 2 min, sp 4

     

    Add the flour, b. powder, salt, ground almond and sour cream and mix 20 sec, sp 3

     

    Spoon into pan and very lightly press in the feijoa's, cut side up, in a single layer

     

    Mix together the ginger & coarse sugar in the MC and sprinkle evenly over fruit

     

    Put cake in oven and immediately reduce heat to 180C and bake for 50 mins

     

    Turn oven off and leave in there for 1 hour, or leave overnight

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
