Ingredients
crackles
- 230 g buckwheat, activated and dried
- 55 g dessicated coconut
- 40 g cacao powder
- 50 g coconut oil
- 80 g Coconut butter
- 60 g cacao butter
- 140 g pitted dates
- 20 g Carob Powder
- 80 g currants
- 30 g Goji Berries
- 1 tsp vanilla
- 1 pinch salt

Weigh the buckwheat, dessicated coconut, cacao powder and carob powder into the TM bowl.
Mix 10 seconds/speed 2. Set aside.
Weigh coconut oil, coconut butter and cocoa butter into the TM bowl.
Chop 5 seconds/speed 8, scrape sides of bowl.
Heat 2 minutes/40C/speed 2. Scrape the sides of the bowl.
Heat 3 minutes/40C/speed 2 or longer until fats all melted.
Add dates, currants, goji berries into the melted fats.
Chop 10 seconds/speed 9.
Add the dry ingredients into the bowl.
Mix 10 seconds/reverse/speed 3.
Spoon into paper or silicon muffin cases (I just half fill) and press the mixture in firmly with the back of a teaspoon.
Place in the refrigerator to set (or in the freezer for a shorter set time).
Tip
This recipe is very similar to the Little Bird Buckwheat Crackle recipe.
Dried fruit - if you dont have currants or goji berrries, just increase the dates.
Coconut butter can be made in your Thermomix from dessicated or shredded coconut. Refer to Quirky Cookbook for method. If you don't have coconut butter, increase the coconut oil (doing so will mean they will soften more easily in your hands).
Store in the fridge, or pantry if in a cold climate. Mine are in the pantry and I live in Auckland (it is winter).
Number of portions you get depends on how much you spoon into the cases.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
