- 500 gms sugar
- 250 gms butter chopped
- 40 gms cocoa
- 1 teaspoonbi carb soda
- 440 gSR flour
- 4 eggs

Grease a deep 27cm x 33cm baking tray and line base with baking paper
Place water, sugar, cocoa, bi carb and butter in TM bowl and cook 10mins 100deg sp4
Transfer into a large bowl and allow to cool too room temperature (37deg)
When cooled return to TM bowl and add flour and eggs. Mix 4mins sp 7 or until mixture becomes paler in colour
Pour into baking tray and cook in moderate (180deg) oven for about 45mins
Allow to stand in pan for 10 mins before turning out onto a cooling rack.
Decorate with Chocolate Fudge Frosting
Tip
This is a very liquid cake batter!
Can be divided between two round spring form pans for baking
Buttermilk can be used instead of water

This cake did not turn out well at all. It was dense/rubbery. Maybe the mixing for 4 minutes was a miss print.
I have to tell you that this cake has been for a couple of years now my family favourite!
i have tried many recipes and this one just seems to be the best

My third attempt at this (first a failure, second okay) was another disaster. I think the issue is over mixing at the end (four minutes of mixing). Once the sugar mixture had cooled to 37 degrees, adding the flour and eggs and combining on speed 4 for no more than 10 seconds, scraping down then another 5 seconds on speed 4 yeilded much better results for me.
Great cake, thank you for the recipe. I did have some trouble with this on my first attempt in my cranky old fan-forced oven. The second attempt was much better, I baked it at 160 for 45 minutes. Next time I will try 50 minutes. Overall the cake is light and fluffy, ideal for a children's party. I used the buttercream icing from the EDC for it and the quantity was perfect.
