Ingredients

  • 160 g dark chocolate
  • 125 g Butter
  • 100 g brown sugar
  • 50 g white sugar
  • 1 tsp vanilla essence
  • 1 egg
  • 100 g Self Raising Flour
  • 150 g plain flour
  • 80 g white chocolate melts
  • 80 g Dark Chocolate Melts

Recipe's preparation

  1. Pre-heat oven to 170 deg C and prepare 2-3 biscuit trays with baking paper.


    1. Add white chocolate melts and dark chocolate melts and roughly chop these 7-10 seconds at a time speed 7 (or use turbo function) until they are chopped into rough chunks. Set aside


    2. Add the 160 g dark chocolate and butter to the bowl and melt this for 3 mins / 50 deg / speed 4. If not fully melted repeat process for 1 min.


    3. Add sugars and mix 30 secs / speed 4.


    4. Add vanilla essence and egg mix 15 secs / speed 4.


    5. Add flours and milk and mix 30 secs / speed 5. Scrape down sides of bowl. Repeat.


    6. Add set aside white and dark choc chunks and mix 20 secs / speed 4.


    7. Remove lid and mix with spatula if chunks not fully combined.


    8. Spoon mixture onto prepared trays and cool 10-15 minutes. Remove from oven while still soft and allow to cool before removing from tray to a wire rack to cool.


     

Tip

These cookies are as good cold as they are reheated in the microwave for a warm winter snack
