- 125 g Butter Cubed, softened
- 210 g caster sugar
- 1 teaspoon vanilla essence
- 1 egg, beaten
- 2 tablespoons cocoa
- 240 g self rasing flour

Pre heat oven to 180C/160C fan forced. Line 2 baking trays with baking paper.
Place butter, sugar and vanilla in TMX bowl and mix on speed 6 for 1 minute or until light and fluffy. The mix on "Counter-clockwise operation" speed 1 for 30 seconds.
Add egg and beat on speed 8 for 30 seconds or until creamy.
Add cocoa and flour and mix on speed 7 for 20 seconds or until well combined. Scrape down sides and mix again on speed 7 for 20 seconds.
Drop rounded teaspoons of mixture into mounds on trays, allowing room for spreading. Bake for 10 minutes. Cool on trays until firm; transfer to a wire rack to cool completely. Store in an airtight container.

Doubled recipe works well with a little extra bowl scraping. Used small ice cream scoop for perfect size and ease
I let my 3yo put the cocoa in. Pretty sure it was more like 1/4 cup. Tastes delicious!!

These were a huge hit in my house. Yum, yum, yum! My only comment is I followed instructions and only got 17 biscuits. Will make a double batch next time. Doesn’t go far with 4 kids xx
