Ingredients

Dough

  • 230 g Butter, softened, chopped
  • 295 g brown sugar
  • 225 g plain flour
  • 1.5 tsp baking powder
  • 3/4 tsp bicarbonate of soda
  • 95 g cocoa powder
  • 210 g sour cream
  • 80 g water
  • 3 eggs
  • 40 g Milk
  • dash vanilla extract

Ganache

  • 200 g choc bits
  • 3/4 cup sour cream
  • 1 tablespoon glucose syrup
  • 1 tsp espresso coffee powder, optional

Recipe's preparation

    How to: Dough
  1. Preheat the oven to 180°C.
    Thoroughly grease a Bundt tin.

    Cream butter and sugar 45 secs/sp 4.

    Add remainder (in the order listed) and blend 2-3 mins/ sp4, until well combined.

    Spread evenly into the prepared Bundt tin.

    Bake 55-60 mins, or until cooked when tested.

    Leave in the pan for 5 minutes brfore turning out onto a wire rack.

    Cover with the genache when cool.

  3. Blitz choc bits sp 7/10-20 secs, or until fine.

    Heat sour cream in a small microwave until just simmering ( 1-2 mins on high)

    Add to ground choc in the bowl Closed lid"Closed lid" and blend 10 secs/ sp 3.

    Add syrup and (optional coffee powder), 10 secs/ sp 3.5.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    Light and moist.
    This cake is so easy to make and it's very light and moist. The only thing I would change is a different ganache next time. This ganache is nice, but I think I would like something a bit thicker next time. Will be making this cake again, for sure. I made this in my TM31 and mixed on sp5-6 for the 2-3 mins.
