Ingredients
- 5 eggs, room temperature
- 170 g coconut milk
- 1/2 level teaspoons vanilla extract
- 1 level tablespoon honey
- 70 g cup coconut flour
- 3 level teaspoon baking powder
- 1/8 level teaspoon sea salt
- 30 g coconut oil, + extra for frying

1.
Add all ingredients into thermomix bowl.
2.
Mix for 10 seconds on speed six. Scape down side of bowl. Check batter has been mixed in, if not mix for another 5 seconds.
3.
Turn on stove and place a fry pan on there. Add some coconut oil and let it melt.
4.
Use a ladle to spoon out batter into fry pan. Or you could just pour out from the thermomix bowl but I find the batter is rather thick. Once the pancake starts to bubble, flip it over with a spatula.

Nah, sorry. They didn't hold their shape while cooking and tasted like a grainy cake.
Great low GI pancakes. Used a dash of stevia instead of honey. Whipped the egg whites first for 2 mins on 3.5 speed and set aside. Mixed dry ingredients, added yolks and mixed, then added everything else including whipped egg whites. Cooked low and slow with cover on pan.

I really enjoyed these.. perfect with a dollop of cream and pure maple syrup for morning or afternoon tea! Super easy to make.. I just need to make sure I have the heat down a lower..
great recipe. Turned out just like others that I have made which took longer to make. Light and fluffy,no eggy taste.they are thinner batter than normal pancakes and you need to cook them at a much lower temperature and be very gentle when you flip them.Also leave out the honey if they burn too easily for you.
Terrible. Didn't work out and huge waste of ingredients.
Was not a big hit in my family. No one liked them. looked like cake batter so had to add lots of milk but still not a good consistency. Very dry tasting. I copped it all day saying "they were the worst pancakes I ever made". So I am not sure what I had done wrong Sorry!

I loved the taste but could not get consistency right. They tasted more like cake than pancakes. Not sure what I did wrong. They still tasted good.
