Ingredients
- 420 g kidney beans, canned, drained
- 1 tablespoon water
- 1 tablespoon vanilla (paste/extract)
- 70 g cacao powder
- 1 teaspoon GF baking powder
- 1/2 teaspoon bicarbonate of soda
- 1/4 teaspoon salt
- 75 g oil
- 5 eggs
- 150 g sugar

In your TM puree the beans, water, one egg, vanilla,
butter and sugar SP 7 20 seconds
Add the remaining eggs & beat for 20 seconds SP 4.
Add the cacao,, baking powder, bicarb and salt and blend SP 4 10 seconds.
Pour batter into cupcake moulds or well greased muffin tray and bake MOD oven for approx 20 minutes or until a toothpick inserted in the middle comes out clean.
Tip
Generally these don't last long enough to top with icing hence the photo straight from the oven before the kids got to them This makes approx 12-18 good sized portions, suitable for wrapping individually and freezing.

LOVE, LOVE, LOVE these little gems! Always on the lookout for healthy snacks for my family and these are a winner! My kids were happily eating them until the other day when my son saw me tipping the beans into the TM! He was like, "I might stop eating those now" Lol...I convinced him he would love them as much as he did before and whaddya know, he has been gobbling them up! Happy days
Good recipe I used coconut sugar and coconut oil . Worked well
is the 420g of beans, the drained weight or the canned weight?
I assume when you say 'butter' in the instructions you mean 'oil'.
