- 1 clove garlic
- 1 Brown Onion Halved
- 30 g oil
- 2 cans four bean mix, OR half pack dried mix soaked and cooked as per instructions
- 1 can Diced Tomatoes (400g)
- 1 can corn kernels, or equivalent frozen
- 2 heaped tablespoon tomato paste
- 2 heaped teaspoons paprika
- 2 teaspoons cumin
- salt and pepper to taste
- chilli, if you like some heat.

1. Chop garlic and onion on sp 7 3 secs, scrape down
2. Add oil and saute for Varoma temp, 3 mins, sp 1
3. Add all remaining ingredients and cook 100 degrees for 15-20mins reverse sp soft. "Counter-clockwise operation" "Gentle stir setting"
Tip
I did use dried mix - this requires soaking overnight then cooking the mix for 45 mins which will add time to preparation.
Cook until desired thickness achieved, leave MC off for thicker sauce and replace with the basket on top of the lid to allow steam out.
I used mountain bread and made wraps with cheese and salad. Would be great with pasta, rice or quinoa.

BEAN SAUCE - I had a few mishaps with this one. I didn't read the title properly and was looking for a bean salad. Then as I started to chop the garlic and onion, I realised I didn't read the corn tin label properly and had creamed corn and no tinned corn kernals , so I used the creamed corn insteead. Then to top it all off I used cumin and a whole lot fell into the bowl about another tablespoon while trying to measure it. Anyway I made it all up and it tasted quite nice but thought it looked more,like a sauce than a salad. lol. I guess I was not thinking properly. So, I am going to use this with a Mexican dish like with tacos and burritos and go in search for a bean salad.
Have made this a couple of times, tasty and a big hit with my 18 month old son! Thanks

Thanks for posting this! It is a lovely, tasty, easy recipe that went down well. All the ingredients are among my pantry staples anyway so very economical too. We had it with rice but next time I will have it with tortillas, guacamole, sour cream and cheese .... nom nom! It had a kind of refried beans texture about it, which we love and I used half a teaspoon of chilli powder which gave it a lovely kick. Definately a keeper.
