Ingredients
Muffin Mixture
- 150 grams Apple, Cored and Quartered, (Approx 1 large Apple)
- 95 grams Butter
- 1 egg
- 190 grams Milk
- 280 grams bakers flour
- 2 teaspoons baking powder
- 40 grams honey
- 110 grams brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla essence / paste
Crumble Topping
- 40 grams brown sugar
- 50 grams bakers flour
- 1/2 teaspoon cinnamon
- 2 tablespoons Butter

Pre-Heat oven to 180 degrees fan forced
Place sugar, flour and cinnamon into TMX bowl 5 sec / speed 4
Leave the M/C off 1 min / speed 2.5
Add butter through the lid while it is turning
The butter will crumble and the mixture will resemble bread crumbs
Transfer to bowl and set aside.
Add apple 4 sec / speed 4
Transfer Apple into a bowl and set aside
Do NOT clean THX bowl
Add butter to bowl 1 min 30 sec / 60 deg / speed 1
Add eggs and milk 6 sec / speed 4
Add flour, baking powder, honey, sugar, cinnamon and vanilla essence 10 sec / speed 4
Add reserved apple 20 sec / "Counter-clockwise operation" speed 3.5
Spoon into 12 muffin cases / tray (greased or non stick)
Sprinkle with Crumble.
Bake in oven for approx 20 mins until golden
Check to see if they are cooked by inserting a fork or toothpick into muffin. If it comes out clean they are cooked.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. I've been so disappointed with apple muffin recipes but this one is brilliant. I have a few tweaks. I reduced sugar in the muffin mix to 80g but it was still a bit sweet. 50-70g would be better. I used maple syrup instead of honey and increased the apple to two medium Granny Smith apples. This would be fine without the crumble too.

Great recipe Thank you. I made with pears instead of apple, less sugar as per other comments and no honey. I also added Bi-Carb (1 tsp) as I wanted a golden colour finish. I am about to make again today.

LOL! I didn't read the recipe properly the first time and did it all back to front. This is the second time I have made the recipe and it worked this time.
No wonder I was confused! This time I followed the method for the crumble for making the muffin mixture and discovered that the mixture with the sugar, flour, butter and cinnamon made the mixture very homogenous and my mistake was a fantastic new invention! I will make the muffin mixture using the method for the crumble next time.
I added extra apple and loved the extra fruit. I might add in sultanas next time. I will also add in oats to the muffin mixture. I used dark brown sugar because it has extra molasses in it for added flavour.
Instead of milk I used buttermilk and I added in two eggs and reduced the honey to 1 dessertspoon. I did not make the crumble to reduce the amount of fat and sugar.
I doubled the recipe and cooked it in a large Pyrex dish rather than muffins. 180 degrees for about 45 minutes.

Delicious! I made a double batch but with 100g sugar in the batter, maple syrup rather than honey one batch worth of crumble. Plenty sweet for our family, could reduce the sugar a little more too. Will definitely make again!
