  • 2 egg whites
  • 55 g raw sugar
  • 1 Granny Smith Apple
  • 3 bananas
  • 70 g sultanas
  • 3/4 teaspoon bicarb soda
  • 310 g Wholemeal Self Raising Flour

Recipe's preparation

  1. 1. Preheat oven to 200 degrees

    2. Coat 12 cup muffin tray with cooping spray

    3. Beat egg whites and sugar in TM, speed 5 for 20 seconds.

    4. Add whole apple (cut in quarters) and bananas.  Chop, speed 8 for 10 seconds.

    5. Add sultanas, bicarb soda and flour, mix Counter-clockwise operation"Counter-clockwise operation" speed 1 for 30 seconds or until just combined.

    6. Spoon into muffin tray and bake for 20 minutes or until firm to touch in centre.

    7. Allow muffins to sit in tin for 5 minutes before turning onto a wire rack to cool.

    The kids really enjoyed these, however,  I think the mixing time and speed needs to be changed. At the end of the stated time there was heaps of flour still lying on top of the mixture. I gave it a stir with the spatula. While putting the mixture into the cases I found a huge chunk of apple. Also, when my son took a bite of his cooked muffin he tasted a big lump of bi carb soda.  tmrc_emoticons.p With some minor changes a nice, healthy muffin.
