Ingredients
- 250 grams bacon rashers, cut in 3-4 pieces with no rind
- 250 grams mushrooms
- 30 grams olive oil
- 1 onion
- 1 garlic clove
- 450 grams cauliflower florets
- 1 tbsp Vegetable stock paste, EDC/BCB recipe
- 275 grams water
- 300 grams Dry pasta
- 1000 grams Boiling water
- 1 Thermoserver

1. Add bacon, mushrooms and 15g oil to bowl, chop 3 seconds/speed 4.5
2. Cook for 5min/120 degrees/"Counter-clockwise operation" /speed1
3. Transfer cooked mushroom and bacon to thermoserver and put lid on
4. Without cleaning bowl, add onion, garlic and 15g oil, and chop 3 seconds/speed 7.
5. Cook for 5 minutes/120 degrees/speed 1
6. Add cauliflower and chop for 5 seconds/speed 5
7. While cauliflower is chopping, add pasta to thermoserver on top of bacon and onion, fill thermoserver with boiling water until all pasta is covered (mix if required), replace lid on Thermoserver and leave to cook.
8. Add stock and water and cook for 20 minutes/varoma/speed 2 with simmering basket on top of lid in place of MC
9. Blend cauliflower mix for 1 minute/speed 5 (gradually increasing to speed 10 over the minute)
10. Drain Thermoserver using simmering basket and return drained pasta mix to Thermoserver. Pour over the cauliflower sauce and give it a good mix. Serve immediately.
Tip
We love our pasta cooked in the Thermoserver. Some people don't - if you don't cook the pasta the way you like it usually (Thermoserver method is not for gluten free pasta)
If you aren't dairy free, you can use butter instead of oil, it makes it creamier and I always add some parmesan when serving

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Oh my goodness!! I can't believe I'm the first to rate this recipe. This tastes amazing and you can't even tell there's cauliflower in it, which makes it perfect for the kids! I used butter and 500gms of spelt, cooked on the stove. There's still enough sauce to add to some pasta tomorrow night. A very economical meal.....thanks for sharing.
