  • 2 slices lemon, (do not omit this as it helps prevent crystalisation)
  • 260 grams Boiling water, (must be boiling when you use it)

Recipe's preparation

  1. 1. Add 100g brown or raw sugar and 30g water to bowl. Cook for 15 mins/120 degrees/speed 1 (MC on)

    2. Add 500g sugar, 2 slices of lemon and 260g boiling water(be careful as it can splash a little and it's hot!!!) Cook for 40 mins/120 degrees/reverse/speed 1 (MC off)

    3. Put simmering basket into bowl and strain syrup into sterilised jar. Leave to cool with lid off for around an hour and it will thicken.

Tip

This recipe will give you the consistancy of the squeeze bottle golden syrup, you can cook it longer with a little more heat if you want it thicker.

Can be kept in the pantry for a few months if you used a steralised jar.

If you have a TM31, use varoma temperature for both steps 1 and 2

    LEMON VS LIME VS NONE
    I made a LOT of gingerbread this Christmas so 4 batches of this golden syrup was made. Fantastic savings!

    A couple of notes: I didn't have lemon so I used lime in the first batch. It left a strong lime taste which wasn't that noticeable in gingerbread but was noticeable when I tried to make honeycomb. I wouldn't use lime again if I could help it. The second batch I tried without any citrus. It cystalised into lumps as it cooled. Not so bad if you use it immediately before it cools but that could be tricky with a full batch. So I sent my husband out to buy a lemon and used that for the final two batches. Much better taste (just like shop bought) and no cystalising!

    Is the water amount correct here. Everything is doubled from the inbuilt cookido recipe except for the water. ???

    Perfect. I didn't have lemon, so left it out and worked perfectly. I made this in my TM31, and did both steps on varoma as per tips, but also extended the cooking time by 15mins.

    Aunty Mara try using lime slices instead - would love to know the outcome - lemons and limes are interchangeable - I think the citrus is added to stop crystallisation so lime should do that too.

    To answer Mgoodlad - yes - use the whole of lemon slices -skin and all - as you drain the mixture once cooked and this will strain off the lemon slices. Hope you enjoy making it.
