Ingredients
Ginger biscuits
- 110 g Butter
- 110 g caster sugar
- 110 g golden syrup
- 225 g S.R. Flour
- 2 heaped teaspoons ground ginger
- 1 tsp ground cinnamon
- 1 pinch ground cardamom
- 1 pinch ground black pepper

- Preheat the oven to 180°C and line a large baking tray with baking paper.
1. Melt the butter, sugar and golden syrup on 60°C/ 2 mins/sp2.
2. Add remaining ingredients and blend sp4/20 secs or until well combined. You may need to scrape in between mixing. The mixture will be very soft and buttery.
3. Shape into app 30 balls, press lightly with a fork and bake for 12-15 mins.
4. Cool on tray until firm then transfer to a small wire rack.

There are probably hundreds of recipes for ginger biscuits out there.
Theses have been my favourite long before I got my Thermomix.
They were easy to make then..but even easier now
The mixture is very buttery and produces a crispy outside and a slightly chewy inside.
If you prefer them harder, just increase the baking time to around 18-20 minutes.
