Ingredients
- 4 tablespoons Butter, Melted
- 140 grams Almonds Whole
- 75 grams sugar, Plus 2 TBS extra for sprinkling
- 30 grams plain flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 3 eggs
- 2 tablespoons honey
- 1/4 teaspoon Almond extract
- 12-14 Figs, Raw

Heat oven to 180 degrees. Spray a 9 inch fluted tart pan or pie dish with olive oil spray; set aside.
Place almonds and sugar in mixing bowl and chop for 6 seconds, speed 6.
Add flour, baking powder, cinnamon and salt and mix for 5 seconds on speed 3 to combine.
Add eggs, melted butter, honey and almond extract. Mix for 30 seconds on speed 3-4 or until batter is just mixed. Pour batter into pan.
Remove stem from each fig and cut in half. Arrange fig halves cut side up over the batter. Sprinkle figs with sugar and bake for approximately 30 minutes, until golden outside and dry at centre when skewer is inserted.
Cool before serving.
Tip
You could make this using different fruit, like plums.
Take care the edges don't burn - I put foil over it but then the foil stuck to the middle so I would recommend puting foil around the edges only if using a sloped pie dish.

Tasted this at a demo yesterday so yummy - so had to make today - I made with gluten free flour and topped with sliced apple (as I didn't have any figs) and sprinkled with demenera sugar. It's just like making an 'impossibe pie" mixture and topping with the fruit. Also sprinkled icing sugar over the top for serving, with a dollop of vanilla yoghurt and a couple of strawberries. Will definitely keep on my dessert list.

The mixture was very runny, I'm not sure if it's meant to be that way. It took an extra half hour to cook and was still
soggy on the bottom. I found it very tasty but hubby didn't like it.

Made this pie for family dinner- substituted dried figs and used orange juice to rehydrate them, with vanilla essence instead of Almond essence. but still, a hit everyone went back for 2nds!!

Too easy and yummy! I only had half the amount of figs so I quartered them and it worked fine. It was almost too sweet with the sugar and honey so I served it with natural yoghurt. A very quick and simple desert! Everything you have in the cupboard (and backyard if you're lucky!)
