Ingredients

Flourless chocolate orange hazelnut cake

  • 2 oranges
  • 6 large eggs
  • 200 g ground hazelnuts
  • 30 g cocoa powder
  • 220 g sugar
  • 1/2 tsp ground cinnamon
  • pinch salt
  • 1 heaped teaspoon baking powder, GF if required
  • 1/2 tsp bicarbonate of soda
  • dash vanilla extract
  • icing sugar, To dust, optional
  • Whipped cream and berries, To serve, optional

Recipe's preparation

    How to:
  1. Prepare the oranges:
    Place the oranges in a saucepan. Cover with water and boil for 2 hours until very soft.

    Or:

    Place in a steaming basket in a pressure cooker, add a cup of water and cook on high pressure for 15mins.

    Remove from water (discard the water).
    Cool to room temperature.
    Cut into quarters and remove any seeds.

    Then:

    Preheat the oven to 180°C/ or 160°C ff
    Grease and line a 20cm springform tin.

    Blitz the oranges (skin and all), 40secs/sp6, until a purée is achieved.

    Add the remaining ingredients, (except for the icing sugar, cream and berries).

    Blend 40secs/sp4.5

    Spread into the prepared pan.

    Bake for 45mins-1hour, or until cooked when tested.

    Leave to cool in the pan before placing on a plate.
    Sprinkle with icing sugar, decorate with berries or orange slices.
    Slice and serve with whipped cream.

Tip

Such a delicious cake. Very moist and full of flavour.
