- 400 g Self Raising Flour
- 60 g icing sugar
- 50 g Cold Butter, Chopped
- 150 g cream
- 1 egg
- 100 g Milk
- dash vanilla extract
- A little milk to brush on the tops.

- Preheat the oven to 220°C/200fan
Line a baking tray with baking paper.
1. Combine the flour, sugar and butter, 10secs/sp7. Scrape.
2. Add the cream, egg, milk, essence 30secs/sp4. It will be a very sticky mixture.
3. Turn out onto a well floured bench and press into a 2cm oblong.
4. Either cut into rounds using a scone cutter, or, cut into triangle shapes using a knife.
5. Place onto the prepared tray, just touching, and brush lightly with milk.
6. Bake for 12-15mins, until golden.
7. Remove from oven and wrap in a clean t-towel to keep warm and soft.
8. Serve warm with jam and dollops of cream.
