Ingredients
Gluten Free Chewy Chocolate Chip Cookies
- 115 g Butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 1 1/2 Cup gluten free flour
- 1 level tsp Vanilla Bean Paste
- 1/2 level tsp baking soda
- 1/2 Cup Chocolate Chips
- 1 Pinch salt

- Preheat oven 180°, line baking tray with silicone liner or sheet of baking paper
Add butter to bowl, and melt 4mins, temp 50° Speed 1 (repeat if not fully melted)
Add white sugar, brown sugar and blend 10seconds speed 3, remove lid and add egg, and vanilla paste, place lid back on and mix for 10seconds speed 3
Add Flour, baking soda, salt and chocolate chips, place lid on and mix for 10 seconds speed 4, remove lid and scrape down sides of the bowl, place lid back on and mix for another 10seconds at speed 4
Spoon even size scoops of mixture onto baking tray approx 5cm apart as they do spread, bake for 10-12mins for a soft cookie or 12-14mins for a crunchier cookie
Remove from oven and leave on tray for 5mins, then transfer to wire rack until cool.

Tip
Place cookies in an airtight container and they will be fine for a week, alternatively you can pop in the freezer and pull out when needed

Here's the grams for the ingredients
1/2 cup white sugar = 115 grams
1/2 cup brown sugar = 115 grams
1 1/2 cups gluten free flour = 210 grams
1/2 cup chocolate chips = 70 grams
Super easy to make. I actually added a cup of chocolate chips (1/2 milk chocolate and 1/2 white chocolate) and they turned out perfect. Very impressed!
