Ingredients

  • 125 g Milk, or soy
  • zest and juice of one lemon
  • 200 g raw almonds
  • 200 g sugar
  • 175 g Fine polenta
  • 1 1/2 teaspoon bakng powder
  • .1/2 teaspoon baking soda
  • 1/2 teaspoon coarse salt
  • 150 g olive oil
  • 3 large eggs, i used 4 small ones
  • 1 teaspoon Almond extract
  • icing sugar for dusting

Recipe's preparation

  1. preheat oven to 160 deg celcius

    1.combine milk and juice in bowl and let stand to thicken I used 2 small lemons

    2.place almonds and lemon zest in TM bowl and grind 5 secs speed 9 til coarse meal,

    3.add sugar, polenta, baking powder, baking soda and salt and turbo 2 secs x 2  or 4 x with TM31

    4. add all other ingredients, eggs, oil, extract, milk mixture and combine 20 secs speed 4-5

    5. prepare tin , I used soy spray on bundt tin.

    6. pour batter into pan and cook in centre of oven for 45-60 mins til golden and tester inserted into centre comes out clean

    7. let completely cook in pan on wire rack

    dust with icing just before serving 

     

     

Tip

make your own icing sugar... 50gm raw sugar, 10 secs speed 10. 

serve with auto custard.. yum!
