Ingredients

Corned Beef Pie

  • 350 grams corned beef, cooked cubed
  • 80 grams Cheddar cheese, cubed 2cm
  • 1 tbsp olive oil
  • 2 stick celery stalk, 2cm chopped
  • 2 --- carrots, 2cm pieces
  • 300 grams potato, floury chopped 2 cm pieces
  • 1 onion, large cut in quarters
  • 1 dried thyme, or fresh
  • parsley, few sprigs dry or fresh
  • 1 egg, mix with a little milk , egg wash
  • 1 portions pastry, shortcrust, sweet, ready prepared or thermomix
  • 1 portions pastry, puff

Recipe's preparation

    filling
  1. place 350 gm corned beef , cubed in mixing bowl and shred 5 secs speed Counter-clockwise operation"Counter-clockwise operation" speed 5 set aside
  2. place cubed cheese in mixing bowl and chop 3 secs speed 5
    set aside in bowl
  3. place onion, celery carrots and potato in mixing bowl and chop 5 secs speed 5 may need to check and chop a little more .
    add oil and butter and cook 10 mins 100 deg Counter-clockwise operation"Counter-clockwise operation" speed 1 til soft
  4. empty bowl of cooked veg adn herbs with salt and pepper to taste and mix with corned beef and cheese, mix well without overworking and set aside to cool for 30 mins
  5. Line pie dish or 4-5 small pie dishes with shortcrust pastry with overhanging edge. Brush edge with egg wash and fill with chilled corned beef mix
  6. Top pie with puff pastry rolled 5mm thick sealing edges together then trim with a sharp knife leaving tidy edge using the back of a fork to crimp edges. Egg wash all pie
  7. Insert tip of sharp knife 3 times in centre of pie to let stem out
  8. bake in prepared oven at 190 deg C for 40 mins , checking after 30 mins til golden brown

make your own pastry using thermomix method or use 4 sheets prepared , can use all puff if you like
