- 200 g Butter
- 150 g Rapadura or Raw Sugar
- 200 g Gluten Free S/R Flour
- 1 tablespoon vanilla extract
- 1 teaspoon bicarb
- 1 teaspoon baking powder
- 1 pinch salt
- 2 teaspoon ground cinnamon
- 3 eggs
- 300 g carrots, roughly chopped
- 100 g walnuts
- 100 g white chocolate, melts

** Preheat oven to 180 deg.
1. Add all ingredients to TM and mix - 40 sec/speed 5. Use spaula to assist. Check that all carrot pieces have been chopped. Mix for another few seconds on speed 5 if required.
2. Pour into muffin cases and bake for 20 min or until cooked and golden.

Make these a lot but use only 100g of sugar and 120g butter. Include zucchini and saltannas instead of white chocolate

Very yummy, the whole family loved these!! substituted 50 g of carrots with dates, can cut back on sugar next time
really delicious...I processed the carrot before I placed the other ingredients into the Thermomix...very tasty, extremely moist and delicious

These muffins are so yummy! I didn't have enough carrot so made up the weight with dates. Definitely on my fav list!
