  • 125 grams Butter
  • 2 eggs, lightly beaten
  • dash vanilla
  • 100 grams sugar
  • 110 grams Milk
  • 320 grams SR flour

Recipe's preparation

  1. Preheat oven to 180-200 degrees.
  2. Add sugar to bowl and blitz 20secs S9

    Chop butter into 2cms pieces and add to bowl. Beat 1min S6, scape down and repeat if necessary. Mixture should be light and fluffy.
  3. Add the vanilla and lightly beaten eggs through the lid on S2 for about 30 secs.
  4. Add the flour and milk and mix well 30sec S3-4. Stop and scrape down making sure ingredients are mixed around the blades and there are no flour pockets.
  5. Drop desertspoons of mixture into patty cases and bake in a moderate oven for 10-15 minutes. remove from patty pan and cool on a wire rack.

Tip

Don't overcook or they will be dry.

Decorate with icing and sprinkles. I use doTerra oils for flavour in the icing - Orange, peppermint and lemon.

If you leave the cakes in the patty pans the paper cases will sweat off the cup cakes so cool them on a wire rack.

    Could you please tell me when to add the sugar? Is it whisked with the butter to begin with or added later?
