  • .5 teaspoons vanilla extract
  • 10 grams cornflour

Recipe's preparation

  1. Preheat oven to 150 degrees. You can bake this in a slice tray or roll out and cut shapes, keep mixture 1 cm thick.
  2. Place butter into bowl and chop 20secs, speed 4
  3. Add vanilla and caster sugar and mix 10secs, speed 4
  4. Insert butterfly and slowly increase speed up to 4 for 40secs. Scrape sides of bowl, and repeat 40 secs, speed 4
  5. Mixture should be light and creamy, remove butterfly
  6. Sift flours and slowly add to bowl through hole in lid using a tablespoon, over 45 seconds on speed 4-5
  7. Scrape side of bowl and beat 2 mins speed 3-4
  8. Press into lamington tin, mark cut lines with a knife, prick with a fork and sprinkle with a little extra caster sugar
    OR
    Press mixture onto thermomat to about 1cm, use cookie cutters carefully on thermomat and cut shapes until all the mixture is used. Re-shape and keep cutting, use additional flour if the mix is too sticky. Prick biscuit with a fork and sprinkle with sugar.
  9. Bake 30-40 minutes or until slightly golden in colour.
    Store in an airtight container.

Tip

I make this at Christmas and do the christmas cookie cutters, bag in cellophane and gift to friends and family.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
