Lemon Cupcakes
- Zest from 1 Lemon
- 150 g caster sugar
- 120 g Butter
- 20 g Lemon Juice., of 1 lemon,approx
- 280 g Self Raising Flour
- 2 eggs
- 100 g Milk
- Icing Sugar to Dust
Lemon Cream Cheese
- 120 g cream cheese, cut into cubes
- 45 g Butter, cut into cubes, sofftened
- 210 g icing sugar
- 1 tbsp lemon juice

1. Preheat oven 170* (fan forced). Place 16 large patty cases into muffin tin.
2. Place lemon zest into TM bowl, mill 10sec/Sp 7, scrape down sides. Repeat until milled very fine, approx 3 or 4 times.
3. Add caster sugar, mill 10sec/Sp 9. Set lemon sugar aside.
4. Place butter into TM bowl, melt 1min30sec/50*/Sp 4
5. Add lemonsugar mixture, lemon juice, flour, eggs & milk. mix 40sec/Sp 6. Scrape down sides, mix 5sec/Sp 6.
6. Half fill 16 large patty cases with cake mixture, divide evenly.
7. Cook 170* for 20min or until light golden colour.
8. Remove cupcakes from muffin tin immediately and place on wire rack to cool.
9. When completely cooled, using a pointy serrated knife, cut a little disc out of top of cupcake at a slight angle so as to form a cone in top. Cut the disc in half and set aside.
10. Pipe cream cheese around in the cone of the cupcake then arrange "angel wings" as in picture, dust with Icing sugar to serve.
1. Place cream cheese and butter in TM bowl, mix 10sec/Sp 4. Scrape down sides.
2. Add icing sugar and lemon juice and mix at 10sec/Sp 4, scrape down and repeat until mixture is smooth.

I didn't have cream cheese to make the icing. I added poppy seeds to the cupcake and left them plain with no icing and they were lovely! Thanks for the recipe. I'll be making them again.
