- 1 lemon, peel only
- 125 grams Butter, chopped
- 75 grams sugar
- 185 grams plain flour
- 1.5 level teaspoons baking powder
- 2 tablespoons Milk
- 150 grams jam of your choice

Preheat your oven to 180c. Line a good size baking tray with non stick paper.
Place lemon peel in "Closed lid" . Wizz for 15 secs sp.9. Leave in "Closed lid" .
Add sugar and mill 10 secs sp.9.
Add remaining ingredients to "Closed lid" and set for 15 secs, sp.5
You may need to use your spatula to scrape mixture down and wiz again if necessary.
Roll tspns of mixture into balls and place on prepared trays. Flatten slightly, use your MC for this.
Using the end of a wooden spoon, or your index finger, make an indentation in each biscuit. Don't break through the dough.
Fill each hole with jam.
Bake in pre-heated oven for 15-18 minutes, or until lightly golden on top.
Leave on trays to cool and firm up for a few minutes.
Transfer to wire racks to cool.
Store in airtight containers.
Tip
The "twist" in this recipe is the lemon peel.
Feel free to leave it out.
You may wish to replace it with a dash of vanilla essence if you do.

These were yummy and fun to make with the kids. Defo make the hole in the middle deep or the jam will come out. i made these a second time but used 100g milled raw almonds replacing some flour and the kids loved them.
Simple and tasty. I like how the mixture comes together and it is not sticky to roll. Will make again, thank you.

Very easy and delicious
Mine were a bit of hit and miss before I got them right. A couple of tricks. Firstly make your indentation fairly wide and deep...but don't break through the dough. I find the end of a wooden spoon the perfect size. The other trick is if you want it really neat is to pipe the jam into the centre. But honestly..at the rate they disappear, who cares if they aren't perfect..!
