Ingredients

Pastry

  • 250 grams unsalted butter (cold)
  • 350 grams plain flour, plus extra for dusting
  • 1 tablespoon sugar (I use coconut sugar)
  • 1 Pinch salt
  • 150 grams cold water

Filling

  • 2000 grams apples of choice
  • 1 lemon
  • 50 grams unsalted butter
  • 100 grams sugar (I use coconut sugar)
  • 1 pinch cinnamon

Topping

  • 1 egg white

Recipe's preparation

    Pastry
  1. Chop the butter into 1cm cubes and freezr till really cold. 

    Put flour, pinch of salt, sugar and butter into Closed lid"Closed lid" . Pulse/Turbo 3-4 times till just combined and a little chunky. Add the water and Pulse/Turbo again 4-5 times till it comes together. 

    Put onto bench or thermomat and divide into 2 equal parts. Wrap in clingfilm and put in the fridge to rest for at least 1 hr. 

  2. Filling
  3. Peel apples, cut half of them into big chunks and the other half into 1cm cubes. Put into a dish with the juice of our lemon so they don't discolor. 

    Melt the butter and sugar 5mins/95/2

    Add the big chunks of apple to the Closed lid"Closed lid"  and the cinnamon. 15mins/100/Counter-clockwise operation"Counter-clockwise operation" /2

    Then add the cubed peices 7mins/100/Counter-clockwise operation"Counter-clockwise operation" /2

    Put in a bowl and allow to cool

  4. Pie assembly
  5. Pre heat oven to 190o

    On a floured surface roll out one peice of pasty and line the bottom fo your pie dish, allow overhang. Brush the rim with the egg white. Pile in the filling (Try not to have too much juice) pat down gently. Roll out 2nd peice of pasrty and cover pie. Crinkle together with a fork and remove excess. 

  6. Eggwash the top and decorate if you want. Place into the bottom of the oven for 1hr or till golden. 

  7. Enjoy alone or with cream or custard.

    Easy to make and use pastry, tasted delicious. Best apple pie I’ve made in the thermie. Make sure the first batch of apples are pretty chunky as mine ended up turning to mush but the top apples were nice and held their shape. You could halve the recipe for 4 people as the pie was pretty huge and easily fed 6-8.

    With rice malt syrup in the dough or the apples?? I dont blind bake this pastry hence why thats not part of the instructions to do so. tmrc_emoticons.) Did you let it rest for an hour?? Sorry it didnt work, we make it often and it works great.

    I tried it with rice malt syrup - massive failure.  Pastry failed to stick to sides and melted/fell off when i tried to blind bake it(it was very buttery). I felt that there was not enough flour. Kept the apple mixture and used another pastry recipe and it then worked
