- 120 grams Butter
- 120 grams sugar
- 140 grams plain four
- 2 tsp baking powder
- 80 grams Desiccated Coconut
- 1 --- egg
- 1/2 tsp vanilla essence

I'm cooking this todayRecipe's preparation
- Grease or line 2 x baking trays with baking paper.
- Preheat oven to 160 degrees fan forced or 180 degrees conventional.
- Place butter in TM bowl and melt at 60 degrees, speed 3 for 2.5 minutes. (or until butter has melted)
- Add sugar, flour, baking powder and coconut and mix for 5 secs on speed 3.
- Scrape down the sides of the bowl and then add egg and vanilla. mix for a further 10 secs on speed 3.
- Roll tablespoonfuls into balls and place onto tray (allowing room to spread). Flatten slightly with a fork.
- Bake for 10 mins. Allow to cool slightly on tray before transferring to rack.
- Enjoy!

Absolutely delicious, my kids loved them.
I needed to make a dairy free biscuit for a friend with an allergy & couldn't find a good recipe with the ingredients I had on hand - so I used this one & substituted the butter for 90g coconut oil. Yum! A big hit!
