Ingredients

Kiwi, Lime and Coconut Muffins

  • 100 grams raw sugar
  • 1 lime, zest peeled with potato peeler
  • 90 grams Butter
  • 45 grams desicated coconut
  • 300 grams self rasing flour
  • 250 grams buttermilk
  • 1 egg
  • 3 kiwifruit, peeled and thinly sliced crossways
  • Icing Sugar to Dust

Recipe's preparation

  1. Preheat oven to 200 degrees c. 

    Either grease or place cup cake cases in muffin tins (makes approx 1tmrc_emoticons.8)

    Mill sugar and lime rind for 20 seconds speed 9.  Set aside

    Melt butter for 2 minutes 60 degrees speed 2

    Add all remaining ingredients including the milled sugar but not the kiwi fruit and shredded coconut

    Mix for 5 seconds on speed 5

    Divide mixture between muffin tins

    Top with kiwi slices and sprinkle with shredded coconut

    Bake for 20 – 25 mins

    Leave in tins for 5 minutes before placing on cooling rack

    Dust with icing sugar

Tip

Muffins require very minimal mixing and I found the Thermomix a great way to incorporate the ingredients without overworking.  I was amazed when I opened the oven to see how well the muffins had risen – just lovely and light and airy – a real hit at the morning tea I took them too.

    Thanks for the recipe, these were nice. I like the kiwi on top but next time i think i will add a little kiwi to the mixture as well.
