  • 80 g Butter - cubed
  • 200 g sugar
  • 1 tsp Vanilla Bean Paste, Essence or Extract also ok
  • 370 g SR flour
  • 1 egg
  • 320 Mls Milk
  • zest From One Lemon
  • 1 tbsp chia seeds

Recipe's preparation

  1. Pre heat oven to 180 degrees. Place patty cases into a muffin tin. This will make 12.
    Place butter into bowl. Blitz on speed 5 for 2 minutes. Scrape down.
    Add sugar and vanilla to bowl. Blitz on speed 5 until pale. Scrape down.
    Add remaining ingredients. Blitz on speed 5 until just combined. Do not over mix the batter.
    Pour into patty cases. Bake for 20 minutes or until golden on top.

    These were super light and very tasty. I substituted the juice of the lemon for part of the milk and used GF flour. Might reduce the sugar slightly next time, but otherwise fabulous. Also great with the leftover cream cheese icing I had in the fridge, and my partner warmed his and had it with ice-cream which he also said was good.

    Lovely. I added 30gms lemon juice and cut down the milk by 30gms. Superb for lunchbox

    Used poppy seeds instead of chia (as I didn’t have any). And I put a teaspoon of lemon butter in the middle of muffin and topped with muffin mix before cooking. My son and hubby said they were YUM!!

    I tried 20ml of lemon juice and 300ml of milk. Still not lemony enough. Might try with lemon butter next time.

    These are nice, but I couldn't taste any lemon at all - they taste like plain muffins, even though I used the zest of a decent sized lemon. I would try them again, perhaps substituting some of the milk for lemon juice?  Not sure how that would go, but it's worth a try tmrc_emoticons.-)

    I had a little trouble with the butter - mine was at room temp, and I suspect it should have been colder, as I couldn't really cream it properly.  The first 2 minute blitz lasted about 20 seconds before the blades were just spinning and no longer doing anything to the butter! 

    The consistency is good, and they are definitely easy - if I can get some lemony flavour into them, I'll be very happy.
