To Make

  • 80 g Butter - cubed
  • 200 g sugar
  • 1 tsp Vanilla Bean Paste, Essence or Extract is ok
  • 370 g SR flour
  • 30 g Dessicated or shredded coconut
  • 1 egg
  • 320 MLs Coconut Milk or Milk of Choice
  • 120 g fresh or frozen raspberries

Recipe's preparation

  1. Pre heat oven to 180 degrees. Place patty cases into a muffin tin. This will make 12.
    Place butter into bowl. Blitz on speed 5 for 2 minutes. Scrape down.
    Add sugar and vanilla to bowl. Blitz on speed 5 until pale. Scrape down.
    Add remaining ingredients except raspberries. Blitz on speed 5 until just combined. Do not over mix the batter.
    Place raspberries into the bowl and stir gently with the tmx spatula until just combined.
    Pour into patty cases. Bake for 20 minutes or until golden on top.

    Delicious and easy! Currently dairy free so made with nuttelex and almond milk but worked perfectly! Also halved sugar but doubled raspberries as per previous suggestions

    Awesome recipe. Came out looking amazing 😍. 125g sugar, used the butterfly whisk to beat the butter and sugar, doubled the raspberries and threw in the last 70g of white choc chips I had on hand. Made 12 standard sized and 5 mini-muffins. 👌

    These are delicious! I also reduced the sugar to 150g and added 100g of white choc chips. Speed 5 for creaming is way too fast, just flicks the ingredients to the outer. Speed 3 with a couple of pauses to scrape the sides down is perfect

    We needed a healthy snack to take to school to share, we halved the sugar, doubled the berries and made them into mini muffins. Amazing! Will be making these again. Thank you

    I added white chocolate and substituted in GF flour cause I wanted to give some to a GF friend. Amazing and they made heaps! Super yummy!
