Ingredients
To Make
- 1 small zucchini
- 1 carrot
- 1 potato
- 1 onion or 5 spring onions
- a few sprigs of parsley
- 6 pieces short cut bacon, diced or chopped in TM
- 150 g grated cheese
- 20 g Milk
- 2 eggs
- 180 g SR flour
- 1 tablespoon Concentrated vegetable stock

Preheat oven to 180 degrees. Line two baking trays with baking paper.
Place vegetables, spring onions and parsley in bowl.
Blitz on speed 9 for 4-5 secs. You want the vegetables to be fine but have some texture to them. You don't want pureed vegetables.
Add remaining ingredients.
Blitz on speed 5 for 10 secs or until just combined. If the mixture is too dry add a little more milk.
Spoon heaped teaspoons of mixture on to baking trays. This makes 30 bites.
Bake for 15 minutes or until slightly golden on top.
Serve warm or cold.

My fussy 2 year old who wont touch veggies devoured these.
Easy and delicious. I ran out of baking paper so used foil. They did stick badly to that, I should have oil sprayed it first! Anyway, I just transferred the foil to a cooling rack, and peeled foil carefully away once they were cool.
These were delicious both out of the oven and possible even better when cold! Great addition to school lunch too. thanks so much for sharing, will definitely be a regular dish
Will speed 9 mush the vegies? Looking at trying this recipe.
Definitely a kid pleaser
I have been informed by my 7 year old daughter that these need to be in her school lunchbox every day. Um, ok! I also gave one to my zucchini hating friend and she ate 5. Told her after about the zucchini after and she was amazed she couldn't tell. The joys of hiding vegies. YAY! Thanks
these little 'treats' were just want I needed to get my 2 year old to eat veges. She loved these and asked for 'more dinner biscuit'
These were ok. Kids loved them and kept eating them, probably helps they didn't know what was in them. Hubby and I thought they were ok but a bit bland like they were missing something maybe even just sone pepper or something. Will make again but play around with it a little

awesome, hubby took them to work and i made a chilli dipping sauce to go with, he said everyone was jealous of his lunch! will be making again for all those hidden vegie snacks
