- 2 1/2 cups of Self Raising flour
- 3/4 Cup of Caster sugar
- 1 heaped tablespoon of grated lemon zest
- 1/4 cup of lemon juice
- 1 cup of plain yogurt
- 1 or 1/2 teaspoon of vanilla essence
- 1/2 cup of vegetable oil
- 1 Egg lightly beaten
- Icing
- juice of half a lemon
- icing sugar to make a runny paste to drizzle over the top of the muffins or just dust with icing sugar

Pre heat oven to 160 for fan forced
Add flour, sugar to bowl and blend 3 seconds speed 3
Add the rest of ingrediants and blend for 35 seconds, speed 3
Pour batter in your desired oiled muffin pans - I used a mini loaf pan and made 8 - cook 15 - 20 minutes or untill a skewer comes out clean
Cool and drizzle with icing or dust with icing sugar
Tip
you could sub the lemon with orange

Nice flavour and texture. Very easy to make although weight rather than cup measurements would have made it even easier. I substituted 1/2 cup of the flour with LSA. Thank you for the recipe.
Lovely moist muffins, I added poppyseed which gave a bit more texture and flavor.
