Mini sticky date loaf
- 250g pitted dates, Dried
- 250g water
- 60g Butter, Chopped
- 150g golden syrup
- 150g caster sugar
- 1 tsp bicarbonate of soda
- 2 eggs
- 225g plain flour
- 1 tsp baking powder
- dash vanilla extract

- Preheat the oven to 170°C regular oven.
Lightly spray mini 12 loaf holes with non stick cooking spray.
Or use muffin pans.
1. Place dates in the "Closed lid" with 250g water, 7mins/100°C/sp2, until water absorbed and the dates are mushy.
2. Add the butter, sugar and golden syrup 45secs/sp2. Scrape.
3. Add the bicarb 15secs/sp3. It will froth. Set aside to cool for 10 minutes.
4. Add the flour, baking powder and eggs, 35secs/sp4.
5. Divide between the lightly greased silicone pans. Smooth the tops.
6. Bake 15-20 minutes or until cooked when tested.
7. Leave in the pans for 5 minutes before turning out to cool on a wire rack.
How to:
Tip
Serve warm from the oven as a pudding with icecream and your favourite caramel sauce..😋
Or split and slathered with butter.. 😋

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
