Ingredients

Cake Mix

  • 125 grams Butter, Softened
  • 200 grams sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 85 grams ground almonds
  • 3 tablespoons cocoa
  • 30 grams Shredded coconut
  • 200 grams Self Raising Flour, Can be Gluten Free
  • 320 grams sour cream
  • 125 grams espresso or strong black coffee

Topping

  • 150 grams water
  • 150 grams sugar
  • 50 grams golden syrup
  • 80 grams Butter
  • 150 grams flaked almonds
  • 30 grams Shredded coconut

Recipe's preparation

    Cake Mixture
  1. Preheat oven to 160 degrees, grease and line a 24cm cake tin

    Cream butter and sugar 30 seconds speed 4

    Add eggs and vanilla beat 20 seconds speed 3

    In separate bowl mix together almonds, flour and cocoa

    Add half the flour mix and sour cream to TM and mix 20 seconds reverse speed 3

    Repeat with remaining flour 

    Bake in oven for 1 hour until cooked through

     

  2. For topping

    Add sugar and water to TM bowl and cook 5 minutes, 100 speed 2

    add remaining ingredients mix 5 seconds reverse speed 2

    Pour over cooked cake and return to oven for 10 minutes or until topping has set

    Remove from oven, allow to cool in the tin for 10 minutes before removing and cooling on a rack

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
