  • 500 grams dark chocolate
  • 120 grams unsalted butter
  • 6 eggs separated
  • 90 grams Rapadura Sugar
  • 150 grams cream
  • 30 grams Rum or Masala
  • 1 teaspoon vanilla essence

Recipe's preparation

    Chocolate Souffle Cake
  1. Preheat oven to 170 degrees

    Grease a 24cm springform tin and line with baking paper

    Grate chocolate in Thermomix 20 seconds speed 5

    Add butter to bowl and melt 2 and 1/2 minutes 50 degrees speed 2. Scrape down sides of bowl and repeat. Put chocolate mixture into another bowl to cool

    Withought cleaning the bowl add sugar and mill 10 seconds speed 9. Scrape down sides of the bowl.

    Insert butterfly, add egg yolks and mix 1 minute speed 3

    Add cream, chocolate mixture, rum and vanilla. Mix 10 seconds speed 4, scrape down sides of bowl and mix 5 seconds speed 4. Put into another bowl

    Thoroughly clean and dry bowl and butterfly. Insert butterfly and whisk egg whites 3 minutes on speed 3.5 or until stiff. Fold egg whites into chocolate mixture

    Pour cake mixture into prepared tin and bake 25-30 minutes or until just set. The cake will crack slightly on top. Leave to cool completely before turning out

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
