Ingredients
Nan's Zucchini Loaf - now DF, GF
- 2 cups zucchini, Grated
- 3 large eggs
- 220 g macadamia oil
- 150 g Coconut sugar
- 100 g Raw Honey
- 1 tsp natural vanilla extract
- 400 g Gluten free plain flour, Well & Good brand
- 2 tsp baking powder, Gluten Free
- 1 tsp bicarbonate of soda
- 2 tsp cinnamon

- 1.Pre-heat oven to 160 degrees C. (don’t be tempted to heat it higher as we are using raw honey it needs a longer, lower temp to cook.
2. Line a large loaf tin with baking paper.
3. Grate 2 small zucchini's (approx 2 cups) 10 seconds/speed 5. Squeeze out water through a sieve. Transfer to bowl and sit aside.
4. Add eggs, combine 10 seconds speed 5.
5. Add oil, combine 5 seconds/speed 5.
6. Add sugar and honey, combine, 20 seconds/speed 4.
7. Add vanilla, flour, baking powder, bicarb and cinnamon. Combine 30 seconds speed 4. Stir in reserved zucchini.
6. Pour batter into loaf tin and cook 80-90 minutes or until skewer comes out clean. Ovens differ, so keep an eye on it from the 75 minute mark. If it starts to brown too much on top place some foil over the top.
remove from ovem, leave in tin to set for 15 minutes before transferring onto wire rack to cool.

Tip
You can use general plain flour in replace of the gluten free plain flour
Use 4 eggs if they are small
Sore in the refrigerator for up to 1 week or freeze in portions

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

My mistake in that I started out thinking this was going to be a savoury loaf. Tasted quite nice and we served with spread for morning tea. Thank you for the recipe.
