Ingredients

Cake

  • 4 Eggs, room temperature, As close to 240g as possible
  • 175 g sugar
  • 110 g cornflour
  • 45 g plain flour
  • 1.5 teaspoon baking powder
  • pinch salt
  • 1 teaspoon vanilla essence

Recipe's preparation

    Method:
  1. 1. Add sugar to bowl and mill 3 sec/speed 9. Set aside.

     

    2. Put a bowl on top of your thermomix bowl and weigh in the cornflour and plain flour. Add the baking powder and sift the ingredients twice. (Sift onto a piece baking paper, pour ingredients back into your sifter and sift again). Set aside.

     

    3. Into a very clean and dry thermomix bowl, add the eggs, salt, sugar and vanilla. Add the butterfly and mix 4 minutes/speed 4, until mixture is thick and creamy.

     

    4. Add the pre-sifted dry ingredients, and mix 10 sec/speed 3 until wet and dry mixture are combined.

     

    5. Divide the mixture between two greased 20cm cake tins. Bang the tins gently on the bench a couple of times to make the bubbles rise to the surface.

     

    6. Bake cakes for around 20 mins in a hot oven (200c). The cakes will be golden and leave the sides of the tin when they are done. Turn out immediately onto cooling racks. (you may want to put baking paper on your cooling rack to prevent wire marks on your cakes.)

     

    7. Sandwich the layers together with whipped cream and strawberry jam and sift some icing sugar on top of the cake.

    Lovely flavour. I am going to mix the eggs, sugar etc for a bit longer next time as it wasn't as light and fluffy as I would like it. Great recipe, thanks.

    I found that I had to beat the egg mixture for at least 15 mins till it thickened up and even then didn’t think it was going to be okay as the mixture was not as thick as if you’d beaten the egg whites separately. However it resulted in probly the best sponge I have made. I’m stoked!!

    Just made this sponge cake, only used one tin and look at the height of it!!!!! It looks and smells delicious, and was super easy to make. First ever attempt at cooking a sponge. Thank you for a great recipe.
