Ingredients

Dough

  • 220 g raw sugar
  • 1 lemon, zest only
  • 1 orange, zest only
  • 2 eggs
  • 350 g plain four
  • 1/2 teaspoon baking powder
  • 50 g pistachio nuts, unsalted, shelled
  • 50 g raw almonds

Recipe's preparation

    Method
  1. Preheat oven to 170 C.


    Place sugar into thermomix bowl and mill for 10 seconds, speed 9.   Add orange and lemon zest into thermomix bowl and mill for a further 10 seconds, speed 9.  The oils from the zest will mix with the sugar forming a soft paste. Scrape down sides of bowl and loosen mix on bottom of bowl.


    Add eggs and mix for 30 seconds, speed 5.


    Add flour and baking powder.  Mix for 10 seconds, speed 4.


    Loosen mix from sides and base again with spatula


    Knead  Closed liddough mode for 30 seconds or until dough comes together into a ball.


    Turn dough onto a Thermomat and lightly knead.  Press dough out flat and sprinlke over the nuts.  enclose nuts in the dough and hand knead ensuring nuts are eveny distributed. 


    Divide mixture in half.  Shape into two logs approximately 25cm x 5cm.


    Place on paper lined oven tray leaving space between the logs.


    Bake for approximately 20 minutes or until light golden brown.  Remove from oven and allow to cool.  This will take approximately one hour.


    Reset oven to 140C.


    When cool, using a small serrated knife, slice the logs diagonally into 5mm thick slices.  Places these slices on a lined oven tray and bake a further 15 - 20 minutes, turning once, until completely dry.


    Remove from oven and allow to cool.


    Will keep 2 - 3 weeks in an airtight container.


     

Tip

Any combination of nuts are ok to substitute in this recipe.  Some dried, apricot, cherry or cranberry could be added too.

    Yummy.
    i over cooked mine because I didn't fully follow the instructions and now it is pretty hard.
    but the next lot i cooked for a normal amount of time and it was much better.
    Will definitely make again. Thanks

    Delicious biscotti!!!!
    I did add some extra flour as I found the mixture to be very wet and didn't come to a ball in the bowl. But what a delicious biscotti!

    The flavour of these bickies is amazing!!  I didn't have any pistachios so just used 100g of roasted blanched almonds....lovely!  I had to cook mine a lot longer than 20mins to dry them out although i think i have over cooked them now as they are extremely crunchy
