Ingredients

Muffins

  • 3 bananas, V Ripe
  • 0.5 --- Cup of Strawberries, washed and stalks removed
  • 1.5 --- Cups almond meal
  • 1 teaspoon Cinammon
  • 2 eggs
  • .25 teaspoon bi-carb
  • 2 teaspoon baking powder

Optional

  • .5 cup nuts, pistashios, pecans, walnuts, macs, cashew (your choice)
  • .5 Chocolate nibs

Recipe's preparation

    Muffins
  1. Turn oven on, preheat 180 deg C. Prepare tins, optional 12 large muffins or a tin loaf.


    If making own almond meal, do so first and set to the side. 


    Add bananas to Closed lid, in counter-clockwise operation 5 sec, speed 3


    Add all other remaining ingreditents. 


    Mix well for 20 seconds, counter-clockwise operation, speed 4


    Scrape down sides of jug if necessary and Mix for a further couple of seconds.


    Pour or spin mixture into muffin liners or loaf tin.


    Bake for approxiatley 45 minutes.


    Use a skewer to test if ready.


     

Tip

Can add protein powder as well.

    5 stars! Super happy with this flavor and no sugar! My four year old made these with me and loves these. We used frozen strawberries and worked great, we doubled the strawberries to 1 cup, and made mini muffins which only took 15mins to bake.
    The frozen strawberries also got mushed up but there was a little bigger pieces still
    left.
    We will definitely make these again and might try different frozen fruits/berries next time tmrc_emoticons.)

    Made these today and they are super!!! I added 125g of strawberries all up and they pretty much went mushy with very little bigger pieces left after whizzing as per the recipe. I also didn't have any almonds or almond meal tmrc_emoticons.( so I just put in 1.5cups of self raising flour and it turned out great! The muffins only took 15/20mins in my oven to cook. Can't wait to dish these out for lunches this week!

    These are really scrummy muffins. I used smaller strawberries which I went to the trouble of halving. They turned to pulp in the mix so I added a couple extra straight into each patty pan.

    For those who love taking advantage of the thermie scales the

    strawberries measured out to 75 grams (before the extra's I added)

    almond meal to 160 grams

    baking powder to 10g

    Plus I baked these fan forced at 180 and they cooked in just under 20 minutes.

    Will make these again - double batch next time. Thanks for sharing.
