Ingredients
Passionfruit Curd Cake
- 230 grams sugar
- 1 lemon, zest only
- 130 grams Butter, softened
- 3 Eggs, Large
- 5 grams vanilla extract
- 230 grams Flour, Plain
- 5 grams baking powder
- 30 grams milk, full fat
- pinch salt
- 1 jar passionfruit curd

Preheat oven to 180C.
Grease and line cake tin. Recipe will fill standard 20cm cake tin.
Add sugar and lemon zest to bowl. Mill 10-20secs/speed 6.
Insert butterfly. Add butter and mix 2-3mins/speed 3. Until light and fluffy.
Add eggs one at a time until incorprated. Add vanilla before the last egg goes in. -Remove butterfly.
Add remaining ingredients.
Mix 1 mins/speed 6. Or until misture becomes smooth. The batter will be pretty dense and thick.
Pour batter into prepared cake tin.
Spoon dollops of passionfruit curd onto top of batter. Use about 1 CUPs worth. Using a spoon gently swirl and mix the curd into the batter until just mixed.
Allow to cool and serve warm with a dusting of icing sugar, an extra lashing of passionfruit curd and whipped cream.

Lemon curd can be substituted in place of Passionfruit curd .
