Ingredients

Pecan and Maple Syrup slice

  • shortbread base
  • 285 grams of plain flour
  • 170 grams of butter, roughly chopped
  • 100 grams of castor sugar
  • 1/4 teaspoon of salt
  • FILLING
  • 55 grams of plain flour
  • 80 grams of brown sugar
  • 1/2 teaspoon of salt
  • 1 level tablespoon of lemon zest
  • 200 grams of a good quality maple syrup
  • 4 large eggs
  • 1 level tablespoon of vanilla essence
  • 2 cups of pecans, chopped

Recipe's preparation

  1. Line a slice tray with baking paper, leaving some at each end to lift the slice out - prehat oven to 160 deg fan forced
    Add the shorbread ingredient base to the bowl and blend 8 seconds, speed 6 --- spread and press this onto the slice base and bake for approx 20 mins - golden to the edges - remove from the oven and cool
    Filling
    Into the bowl add the flour, brown sugar, salt and blend 5 seconds, speed 5
    Add the lemon zest, maple syrup, eggs and vanilla - blend 6 seconds, speed 5 - remove jug from the machine and with a spatula blend the chopped pecans through, let this mix sit while the base cools
    Once the base is cool, reheat the oven and pour over the pecan mix over the base and spread out the pecans if needed and bake 160 deg fan forced for 30 - 40 mins untill the top is set - cool the slice and then place in the fridge for a few hours befor cutting
    This will keep in the freezer for 6mths if properly wrapped
