Brownie base (Cheat's version):
- 1 package choc brownie mix, (Ive used Aldi and Coles brands. Both are good)Alternatively,don't cheat and make your own' disregarding the remaining ingredients below.
- 60 g oil
- 2 eggs
- 1 tsp Peppermint Essence
Cheesecake top
- 250g package cream cheese, softened and chopped
- 100 g sugar
- 1 egg
- dash vanilla extract

- Preheat the oven to 170°C/FF
Grease and line a 20cm square cake pan.
Or just grease a 20cm square silicone pan.
1. Combine the package of Brownie mix with oil, eggs and peppermint essence 15-20secs/sp4, or until combined.
2. Spread evenly into the pan. - 1. Combine all the ingredients, 30secs/sp3.4, until smooth and creamy.
- 1. Spread/pour the cheesecake topping over the top of the unbaked base. Using a skewer or fork, lightly swirl the 2 mixtures together.
Or just dollop the mixture on top.
2. Bake for 30-35minutes, or until cooked when tested.
It's Ok if it's a tiny bit wobbly when you remove it from the oven.
