- 125 grams soft butter
- 150 grams brown sugar
- 135 grams golden syrup or molasses
- 1 egg
- 1/2 teaspoon ground all spice
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground pepper, black or white
- 1/2 teaspoon baking powder
- 1 pinch ground cloves
- 1 pinch salt
- 11/2 teaspoon ground cinnamon
- 380 grams plain or bakers flour
Spiced Icing
- 150 grams pure icing sugar
- 11/2 tablespoons water
- pinch cinnamon
- pinch all spice

Add butter and sugar to TM bowl "Closed lid" and mix 40 sec / speen 4. scrape sides
Add golden syrup/molasses and mix 30 sec / speep 4
add egg thru lid hole while blades are turning speed 3 and mix for 30 sec. scrape sides and mix for 20 sec / speed 4
add spices, flour, salt and pepper and mix 15 sec / speed 6 then knead "Dough mode" for 2 minutes. dough will be wet/sticky
Turn out onto well floured thermomat and shape into a ball, wrap in cling wrap and place in the fridge for at least an hour

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. I made a batch of these to give to neighours for chirstmas - it was a huge hit and I have been asked for more every year from now on. I didn't worry about the icing however as they are lovely with a cuppa just as they are.
Delicious. My Austrian father in law ate 6 in a row! I made the icing with lime juice (no spices) and completely coated the biscuit. Very yummy with the peppery flavour of the biscuit. Thank you!
