Ingredients

Muffins

  • 1 egg
  • 3 Pink lady apples, halved and stalk removed only
  • 150 grams Milk
  • 75 grams Grapeseed Oil
  • 160 grams self-raising flour
  • 65 grams rolled oats
  • 40 grams brown sugar
  • 80 grams dark chocolate chips
  • 2 teaspoons each of mixed spice and cinnamon
  • 1/2 teaspoons each of ground cloves, baking powder and salt

Recipe's preparation

    Muffins
  1. Preheat oven to 200 degrees

    Add the apples to the mixing bowl and pulse 2-3 times to get them "grated"

    Mix in the egg, milk and oil, 3 seconds on 4 and on REVERSE

    Carefully add on top of these wet ingredients all the dry ingredients, mix for 30 seconds on REVERSE and speed 3-4 - it should all look combined like on the photo.

    Spoon in 12 muffin cases and bake on 200 degrees for about 15-20 min.

    These were great, thanks.  They were unbelievably moist and stayed that way for days.  I used rice bran oil instead of grapeseed, and didn't have any spices in the pantry either!  Needed the full 20 minutes in my oven. Lovely mild muffins that my kids loved.

    strong baking powder taste- reduce to 1/4 t 

    remove the apple seeds

    reduce salt to 1/4 t also
