Ingredients
- 1 lime, zest and juice
- 12 pitted dates
- 250 grams Desiccated Coconut
- 150 grams maccademia and pistachio nuts, ie.75 grams each
- 2 tsp coconut oil
- 120 grams cashew nuts, soaked to soften
- 120 grams coconut water
- 5 grams lime juice
- 300 grams mango flesh, is about 2 medium Mango's
- 1 tbsp honey

Add zest of the lime to a dry TM bowl, blits for 5 seconds on speed 7. Add dates, desiccated coconut, mixed nut and coc. oil - mix on speed 7 for 10 seconds. It should be a sticky consistancy - fill bases with this mixture and wash the TM bowl.
Filling: Add rest of ingredients to the TM bowl and mix until it moves consistently and looks like a thick yoghurt. Pour on top of the bases and freeze.
Do take them out about 5-10 min. before you want to eat them.

Tip
If you make more of the base you could make Frozen Mango Sandwiches, i.e. have a base and a topping of the date-mixture.

Hi. I think the recipe is wrong. Should it be 25g of coconut? I used 25g and the base worked perfectly with 10 medjool dates. Makes a perfect amount for 24 mini muffins. Will report back once taste tested!!
