Ingredients
Cake & Syrup
- 120 g pistachio kernels, (plus extra 10-15 kernels for decorating top of cake)
- 330 g almonds
- 160 g Coconut sugar
- 1 tsp ground cinnamon
- 5 eggs
- 1 tsp Vanilla Bean Paste
- 250 g coconut oil
- 200 g Coconut Sugar (extra)
- 100 g honey
- 60-80 g Juice from Blood Orange, (about 1 orange)

1. Preheat oven to 180c (160c fan forced). Line 20x30cm baking tray with baking paper
2. Place pistachios & almonds in bowl. Mil 15sec / sp9
3. Add coconut sugar & cinnamon. Mix 5sec / sp5
4. Add eggs, vanilla & oil. Mix 10sec / sp5
5. Pour into baking tray. Arrange extra pistachios over the top and cook for 30-35mins or until the cake has started to come away from the edges of the tray.
6. Whilst cake is cooking, prepare the syrup. Add extra sugar, honey and orange to clean bowl. Cook 5min / 90degrees / sp3.
7. When cake comes out of oven, pierce top all over with a toothpick or thin skewer. Pour the hot syrup all over the cake & it wil soak into the cake as it cools down
8. Slice when cool and serve with whipped cream for extra indulgence.
This cake is dense & sweet. Enjoy in moderation!
Tip
Suitable for TM31 and TM5
The Blood Orange can be substituted with orange, lemon or water
