Ingredients

Dough

  • 300 g flour, Soft flour, bakers flour
  • 100 g sugar
  • 1 egg
  • 200 g unsalted butter

Filling

  • 600 g Sugar plums or apples, Fruit of your choice really
  • 20 g unsalted butter
  • 15 g raw sugar
  • 1 Tonka bean

Crumble

  • 80 g flour
  • 50 g sugar
  • 50 g Unsalted cold butter

Recipe's preparation

    Crumble
  1. Put all ingredients into Closed lid"Closed lid"

    15-20 seconds on speed Closed lid"Closed lid" 5.

    Now fill the crumble into a bowl and store in fridge.
  2. Dough:

    Put all ingredients into Closed lid"Closed lid"

    Mix for 40 seconds on speed 5. scrape down dough from sides of Closed lid"Closed lid" if need be.

    Now store dough in fridge.
  3. Filling:

    Put tonka bean into Closed lid"Closed lid" . 6seconds speed 10. Scrape down all piece.

    Wash and half the plums carefully. Take out the stones and put into Closed lid"Closed lid" .

    2-4 seconds on speed 5. Be careful, as the plums become mushy pretty quickly. If that happens don't worry. Use the "mush" and just add 200g extra quartered plums later.

    Now add all remaining ingredients for the filling and 6min speed 1 60 degrees.Counter-clockwise operation"Counter-clockwise operation"
  4. Baking dish preparation:

    Heat up the oven to 190 degrees, upper and lower heat.

    Take the dough out of the fridge. Mould the dough into a ca. 31cm round baking tin. The dough will need to cover the base and up the sides.

    Now fill in your hot filling. If it is too mushy, just add the 200g of extra quartered plums on top. If not, leave those off or add them anyway. I like them on. tmrc_emoticons.-)
    If your filling mix is too watery, just drain some of the liquid off before adding it. The mix is suppose to be mushy, not watery. All depending on the water content of your fruit.

    If you like sprinkle ca 30g of jam sugar over the filling and plums. It gives a lovely caramelised topping. But it is not nessessary.

    Tidy up the surface and now sprinkle the crumble over the top.

    Bake in the middle of the oven for 45 minutes to an hour. Depending on your oven.

Tip

If you're using a fruit with a high water content you might have to drain some of the liquid off, before filling it.

If you like you can add a milled tonka bean or cinnamon to the crumble.

I used my home made tonka bean powdered sugar.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
