Weigh flour, baking powder, sugar and salt into TM bowl and mix on speed 4 for 10 seconds.
Add quark, oil and vanilla essence and pulse a few times. Then use the kneading function to just combine everything into a smooth dough, about 30 seconds. (Note: this is an easy dough to over-mix so be careful not to knead too long.)
This is a versatile dough. Here are some ideas for what you can do with it.
*At the kneading stage, add a handful of sultanas or other dried fruit of choice. Cut dough into 8-10 pieces and place into a muffin tin. Brush with milk.
Bake in 200C oven for about 20 mins.
*Press/roll out onto a baking tray and top with fresh cut fruit (plums, apricots & apples especially good); sprinkle with a little cinnamon/cinnamon sugar.
Bake at 180C, 30 - 45 mins.
*Roll out into a rectangle and spread with jam, quark flavoured with lemon, fruit puree, or apple filling (make this in TM - grate a large apple with some cinnamon, chai spice and lemon zest; add currants or raisins if desired). Then roll into log and cut into 1.5cm slices.
Place scrolls on baking tray, brush with milk and bake at 200C, about 15 mins.
*Divide dough into 12 pieces and roll into rounds. Place a tablespoon of vanilla custard (see EDC) in centre and add a teaspoon of jam or fruit puree on top if desired. Fold edges towards the middle on three sides and pinch at corners to form triangles.
Brush with milk and bake at 175C, 12-15 mins.

I love to bake with Quark-Oil dough. It's so versatile. Leave out the sugar and vanilla essence , and it even makes a perfect quick Pizza base. Thanks for the recipe.
