- 1 package Shortcrust Pasty sheets, or make your own
- 1 lemon, rind only
- 180 grams sugar
- 25 grams plain flour
- 4 eggs
- 2 egg yolks, extra
- 1 cup frozen raspberries
- 1/2 cup lemon juice, about 2-4 lemons

Preheat oven to 180C.
Grease app. 20 muffin holes.
1. Cut circles from the thawed shortcrust pastry to fit the pans. No need to blind bake.
2. Weigh sugar and lemon into "Closed lid" and blitz sp9 / 20 seconds. Scrape.
3. Add remainder (except the raspberries) of ingredients and blitz sp4 / 1 minute.
4. Spoon 1 tspn raspberries into each pastry shell.
5. Pour filling mixture into the pastry shells, over the raspberries.
5. Bake 15-20 minutes or until the filling is just set.
6. Cool 5 minutes in the pan before cooling on the wire racks.
7. Dust lightly with icing sugar.
