Ingredients

Cake

  • 1 orange, peel & juice
  • 6 eggs, separated & at room temperature
  • 200 g white sugar, (or make your own from raw sugar in TM)
  • 500 g fine semolina
  • 2 tsp baking powder
  • 1 tsp vanilla essence

Syrup

  • 250 g raw sugar
  • 600 g water

Recipe's preparation

    • Grease a dish (using butter) such as 2.8L glass, rectangular, Pyrex 

    • Place orange peel into TM bowl and zest speed 7, 10-20 sec. Set aside. 

    • Place egg yolks into TM bowl, beat speed 5, with blades turning remove MC & slowly add sugar though top, taking aprox 2 min to add all sugar. Scrape down sides if required. Continue to beat on speed 4 or 5 until creamy, aprox a further 30 sec – 1 min.

    • Add orange juice, semolina, orange zest, baking powder & vanilla. Combine speed 5 for 5-10 sec. Set aside.

    • Insert butterfly to thoroughly clean & dry TM. Bowl needs to be at room temperature, I place it in the fridge for couple min to cool then leave to return to room temp for a few min. 

    • Place egg whites into TM bowl & beat (without MC in place) speed 4 50°C 3-5 min until desired consistency achieved. 

    • Fold egg whites into rest of mixture that was previously set aside. 

    • Pour into prepared dish and bake 180°C for 30 min or until light brown on top.

    • While cake is baking prepare the syrup by boiling the sugar and water together. Place sugar into clean TM bowl & mill 3 sec speed 9. Add water & bring to boiling point 6-8 min Varoma soft spoon.  

  1. Gently pour syrup over cake allowing it to soak in. 

Tip

To make this as a gluten free cake ensure you use gluten free baking powder. 

Can be served alone or with cream or ice cream. 

This is best if made a day or even 2 days in advance.
